  1. It's of Chicken Broth.
  2. Prepare of Ham/Bacon/Pancetta.
  3. Prepare of Med Onion, small dice.
  4. It's of Large Ribs Celery, diced.
  5. It's of Small Bag Matchstick Carrots.
  6. It's of Small Yellow Squash, diced.
  7. You need of Small Zucchini, diced.
  8. You need of Chopped Green Beans.
  9. It's of can Cannellini Beans.
  10. You need of can Petite Diced Tomatoes.
  11. It's of Small box/bag Fresh Spinach.
  12. It's of White Wine/Dry Vermouth.
  13. It's of Fresh or Dried Basil.
  14. It's of Fresh or Dried Parsley.
  15. It's of Garlic.
  16. It's of Herbs de Provence.
  17. It's of Salt/Pepper to taste.
  18. It's of Frozen Cheese Tortellini.

Rustic Italian Tortellini Soup This is my favorite tortellini soup recipe. It's one of those types of soup that are quick to fix on a busy night and full of healthy, tasty ingredients. Stir in the crème fraîche, tortelloni, spinach, cooked red pepper and most of the chopped basil. Season the soup to taste and top with the cheese and remaining basil.

Tortellini Soup instructions

  1. Saute ham/pancetta/bacon in large stock pot. Once browned, add onion, chopped celery, carrots. Saute on med heat for 5 min..
  2. Add in whatever veggies you have on hand (zucchini, yellow squash, green beans), garlic, and herbs if using dried. I usually put in a Tablespoon of each dried. (Add fresh herbs at the end so they stay green and don't turn brown).
  3. Saute for another 5 min..
  4. Add in chicken stock, wine, diced tomatoes, and drained cannelini beans..
  5. Bring to a boil, then reduce heat and simmer until veggies are soft, 5-10 min?.
  6. Taste the soup, make adjustments to broth. At this point you can add more dried herbs, fresh herbs, hot sauce if you like it spicy, worcestershire sauce, salt, etc. I usually wait until the end to add salt because it can change depending on whether you used low sodium or regular broth/beans/tomatoes..
  7. Increase heat to boil again, add in frozen tortellini, cook for 3 min..
  8. Stir in fresh spinach..
  9. Serve with Parmesan cheese and warm crusty loaf of bread. 😁.
